One-Dish Cheesy Chicken Penne Recipe

Although it’s felt like July around here lately, I hope (fingers and toes crossed) that we are FINALLY going to feel some real fall weather. I want a chill in the air, damn it! I want falling leaves, and apple cider, and new sweaters and boots. And mostly, I want to feel like turning on the oven again. When it’s 90 degrees outside like it’s been for the last week or so here, the last thing I want to do is cook food, let alone eat. Soon, very soon, the weather is going to start to cool off and it’ll be time to get cooking. Like this recipe for One-Dish Cheesy Chicken Penne.

This is a super rich pasta dish because of all the cheese but if you’re like me and have all the feelings for cheese it’s worth it. Unless you are really hardcore one serving will probably do ya. Usually, pasta meals mean multiple pots and pans because the pasta cooks separately. Not this one! It all cooks up in one skillet which is great if you’re in the mood for a good meal but not in the mood for a bunch of dishes.

To get this started, melt 3 tablespoons of butter in a large skillet over medium heat. Add garlic and saute 2-3 minutes. Add diced chicken and continue to saute for 3-4 minutes or until chicken is browned.

Now add the milk, chicken stock, pasta and Italian seasoning. Bring to a boil then reduce heat and cover. Simmer on low about 20-25 minutes or until pasta is cooked.

Remove pan from heat and add cheeses. Stir until cheeses are melted and combined. Garnish with some fresh basil and enjoy! For a bonus point, sprinkle 2-3 tablespoons of mozzarella over the top of the serving dish and pop under the broiler for a few minutes until the cheese is bubbly and browned. This is when a toaster/convection oven comes in handy because you can put the plate in and broil.

Just a quick note here about cheese. Ya’ll know I love ALDI and cheese is one reason why. ALDI carries both Asiago cheese and freshly grated Parmesan cheese for around $3.50 each. Are you kidding me? That would likely be 6 or 7 dollars at another grocery store. So if you still haven’t tried ALDI or are on the fence about it, GO TO ALDI.

One-Dish Cheesy Chicken Penne

This is a rich and creamy one-dish pasta meal, perfect for a fall night when you’re planning on staying in and staying cozy.  Mozzarella, asiago, parmesan and Monterey Jack combine to create a sauce that pasta dreams of being covered in. 

  • 1/2 lb penne pasta
  • 16 oz boneless chicken breast, diced
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup milk
  • 1 cup chicken stock
  • 1/2 tsp Italian seasoning
  • 1 cup mozzarella, shredded
  • 1/2 cup asiago, grated
  • 1/2 cup parmesan, grated
  • 1/2 cup Monterey Jack
  • 2 tbsp Cream Cheese
  1. Melt butter in a large skillet over medium heat. Add garlic and saute 2-3 minutes.

  2. Add chicken and saute for 3-4 minutes or until chicken is browned.

  3. Add milk, chicken stock,  pasta, and Italian seasoning to pan. Mix to combine.

  4. Bring to a boil and then reduce heat and cover. Let simmer for 15-20 minutes, stirring occasionally, until pasta is cooked.

  5. Remove from heat and add mozzarella, asiago, parmesan, Monterey Jack and cream cheese. Stir until cheese is melted. 

  6. For an extra touch, sprinkle a few tablespoons of mozzarella over the top of the serving dish and pop under the broiler for a few minutes or until cheese is browned.

  7. Serve with a simple side salad or some garlic bread and enjoy!
