I could eat grilled veggies pretty much every day. They go with everything and are a snap to make. There are so many fresh vegetables available in the summer that you could use in this recipe. Toss your veggies in a low-carb Italian dressing (watch the sugar content) and throw them on the grill. Zucchini, summer squash, onions, peppers, tomatoes, green beans, asparagus, and eggplant are just a few ideas. If you don’t have a pan to put on your grill, try wrapping them in aluminum foil. I’ve used that method for years and it works well.
