Ah, finally!! Fall weather has arrived and that means soup weather has arrived too. One of the first soups I make every fall is Tortellini Soup. It’s so easy to pull together and only has 4 ingredients!
This past Saturday was forecast to be a little rainy and chilly so it seemed like the perfect time to make the first pot of the year. Alex even made an appearance to work on Halloween decorating. Tortellini soup is one of her favorites so it was just added incentive. I always know that if I need her to show up and do something, offering to feed her usually gets me the quickest results. ?
This soup is so easy to make
To start, brown your bulk pork sausage (the kind that comes in the tube) in the bottom of a large stockpot or Dutch oven.
I usually don’t add any extra spices other than a little garlic salt because I find that the seasoning from the sausage gives the soup enough flavor.
Add the chicken broth, spinach, and frozen tortellini.
Now bring it to a boil and then reduce heat to a simmer. Cover and cook until pasta is done. Boom! Done! Serve with some crusty bread and enjoy a job well done. See? I told you it was easy. Your family will think you slaved over a hot stove all day.

Tortellini Soup
This easy four-ingredient soup will have your family thinking you slaved over a hot stove all day. Chicken broth, bulk pork sausage, frozen spinach and frozen cheese tortellini are all it takes to make this hearty soup sure to please even the most discriminating eaters!
- 8 cups chicken broth or chicken stock
- 16 oz bulk pork sausage (I use regular seasoning but spicy or hot would work too)
- 16 oz frozen chopped spinach
- 1 bag frozen cheese tortellini pasta
- 1 tsp garlic salt ((optional))
Brown sausage in the bottom of a stockpot or dutch oven.
Add chicken broth or stock, spinach and frozen tortellini.
Bring to a boil then reduce heat to a simmer.
Cover and simmer until pasta is cooked.
Enjoy! Serve with a side salad or some crusty bread.
